Dianne Holgate’s Favorite Recipe

Thanks to those of you who joined us on the CakeFu Masters Series training today. Dianne did a great job even with the small technical snags we ran into. I said that I would post her recipe for Banana Nut Cookies here so here it is. Enjoy!

Aunt Merlene’s Banana Nut Cookies

Sift into a large bowl:
3 cups oatmeal
3 cups flour
1 tsp baking soda
1 tsp salt
1/2 tsp nutmeg
1/2 tsp cinnamon

Cream on low:
3/4 cup butter
3/4 cup shortening

Add and continue to cream on low:
1 cup brown sugar
1 cup granulated sugar

Add one cup at a time slowly:
2 eggs
2 cups over ripe mashed bananas (about 3 med)
1/2 tsp lemon juice

Add the oatmeal mixture and mix just until incorporated

Optional additions:
1 cup chocolate chips (I like White)
toasted nuts any kind
raisins
craisins

Bake at 350 degrees about 10 min.

For the glaze:
Melt: 1/2 cup butter
Add: 3 tlb milk
1 tsp. vanilla
Stir over low heat.
Add enough powdered sugar to form a thick-ish (2-3 cups) glaze and a pinch of salt. Frost cooled cookies
(if it gets stiff re-heat a little to spread again)
