Chef Mary A. Moy-Hochstetler is a well known sugar artist. She has competed at the Oklahoma State Sugar Art show many times, has appeared on two Ultimate Cake Off episodes and has been the very talented sugar artist on Food Network’s “Have Cake Will Travel”.

Hi. I want to understand this better. We should not use regular candy thermometer such as the one in the slide photo but we should use metal?
